A unique and delicious take on mashed potatoes!

Mashed potatoes are the old standby food. Pretty much everyone likes them and many people absolutely love them. You might even love them so much that you don't think it's possible for them to get any better. But you're wrong. I recently came across a recipe that adds Sabra Hummus to classic mashed potatoes and I'm in love. Mashed potatoes just got even more exciting for me!

You may have tried adding cheese to mashed potatoes before. A little gorgonzola goes a long way in adding some flavor to typical mashed potatoes. But have you ever thought of adding hummus? Probably not. But why not? This recipe is inspired by Sabra, is easy to make and will please any crowd. Not only will hummus mashed potatoes add some extra protein to your side dish, but they'll add a whole lot of flavor.

In fact, these Sabra mashed potatoes could be taken from side dish to main dish. Serve with a side of veggies, and Sabra Hummus mashed potatoes make a completely delicious meal.

What you need:
* 6 Yellow Potatoes (about 5 cups, peeled and cubed)
* 1 1/3 C Sabra Hummus
* 2 Tablespoons Olive Oil
* Salt and pepper to taste
* 1 lemon (cut in 6 wedges)
* 2 Tablespoons fresh parsley (finely chopped)

What to do:
1) Peel the potatoes and place in a bowl of water to cover as you peel them. This will prevent discoloration. Cut potatoes into 1 ½ inch cubes and place in a medium-sized pot with enough water to cover and a ¼ t of salt.

2) Bring pot to a boil and simmer over medium heat for about 30 minutes, or until a fork goes gently through the potatoes.

3) Drain potatoes and put back into pot over medium heat, until moisture leaves the potatoes and they appear dry (about 3 mins.). Remove from heat.

4) Start mashing the potatoes with a potato masher. Add 1 1/3 C Sabra hummus, 2 T olive oil, and salt and pepper to taste.

5) Top with fresh parsley and serve with a lemon wedge to squeeze over top.

Serve to a hungry crowd or sit down with a big bowl of Sabra Hummus mashed potatoes all for yourself. You'll never want plain mashed potatoes again!
